Keen Games says an idle Enshrouded server uses about 4.4 GB of RAM, each player adds up to about 100 MB, and it recommends 16 GB for the machine. On the Early Access build our own test server used about 0.7 GB with nobody on it. For a small group the 4 GB Silver Chest works on that build; for bigger groups, or for headroom after the 1.0 update, choose the 8 GB Huge Chest. We will measure again on 1.0 and update this answer.

You can set the server name, password, player slots and automatic updates, and edit the difficulty preset and chat options in the config file over SFTP.

No. Keen Games has not published official mod support for Enshrouded or its dedicated server, so there is no supported way to add mods here.
